“Bright, even, pale straw yellow. Fine and consistent bead. The nose is gently full and enticing, with aromas of bread dough, yeasty autolysis overlying stonefruit, baked apple, pastry and almond shavings. Medium-full bodied, aromas of baked apple, poached pear entwined with nectarine, lemon curd, unfolding almond croissant, baguette crust and a touch of spice. The mousse is fine and creamy, elevating the aromas along with a fine acid line, carrying attractive, toasty autolysis to a lengthy, poised finish. This Blanc de Blancs is elegant, layered with purity of fruit and autolysis complexity, on a textural mouthfeel and a lengthy closing. Match with white fish beurre blanc and steamed chicken over the next 8+ years.”

“An enticing bouquet of a light and delicate yet fine autolysis, scent of citrus and white peach with a delicate wet chalk mineral suggestion, bright, youthful and floral. Dry, crisp and salivating with flavours that mirror the bouquet with grapefruit and lemon barley, the lees autolysis remains fine layering a complexity throughout the palate. The mousse is lovely with a youthful taut attack, carrying flavours and texture to a moderately complex finish. A lovely aperitif style with excellent drinking from 2024 through 2030.”
